Spring is here which means we’re running around between school drop-offs and pick-ups, after school activities and sports practices. Having healthy snacks handy is a must. Almonds are universally regarded as a tasty and nutritious snack. Best of all, they are so versatile and can easily be dressed up to create a variety of fun snack options. But not all almonds are created equal.
My dear friend Linda is an amazing cook and she introduced me to the idea of making my own roasted almonds. By doing this, you take regular raw almonds and elevate them to a whole new level. They are so much better (and healthier for you) than buying the already roasted kind. My entire family loves them and I know yours will as well. I like to roast a batch on Monday and then have them on my kitchen counter for snacking during the week. I also always keep a jar of them in my car. Best of all, they take no time to make! How to Roast Your Own Almonds:
- Preheat the oven to 400 degrees
- Lay the raw almonds in a single layer on a cookie sheet
- Cook for approx 8 minutes or until brown (shake the pan after 6 minutes) * The trick is to get them as brown as possible without burning them!
- Let cool and serve.
Eat them plain as an afternoon snack. Sometimes I like to sprinkle a little salt on them, but that’s a personal preference. Linda does not approve.
